Aalto’s inspiration runs deep. From Pyramid Lake’s shimmering waters to the sky-scraping peaks that tower above, we’ve translated our neighbouring natural wonders onto our menu. The result is what we call “lake-food” — a homegrown interpretation of seafood that spotlights Jasper’s finest regional flavours.

Duck Breakfast Bowl ($23): Confit duck, sautéed kale, Brussel sprouts, potato rosti, poached eggs, duck jus hollandaise

Quiche Florentine ($21): Free range eggs, nutmeg cream, puff pastry, wilted spinach, gruyère, salad

Brioche French Toast ($21): Almond crème anglaise, saskatoon berries

Croque Monsieur ($21): Rye bread, house bacon, Swiss béchamel, potato rosti. Make it a madame with eggs sunny side, add $3

Classic ($20): House bacon, two eggs your way, potato rosti, toast, charred tomatoes

Brussel Caesar ($18): Shredded & roasted brussels sprouts, purple kale, anchovy gremolata, gruyère, smoked pork belly. Add confit chicken thighs & pork belly for $12. Add 3 oz salmon for $16.
