Aalto’s inspiration runs deep. From Pyramid Lake’s shimmering waters to the sky-scraping peaks that tower above, we’ve translated our neighbouring natural wonders onto our menu. The result is what we call “lake-food” — a homegrown interpretation of seafood that spotlights Jasper’s finest regional flavours.

Dinner ($23-$42): Pretzel Pillows, cheese plate, bison tartare, scallops, garden vegetable bisque, angus striploin, bison petite tenderloin, Kuterra steelhead, duck breast, fettucine

Kids Breakfast ($15-$16): Brioche French toast, half time, JR croque. All kids menus include a glass of juice.

Kids Dinner ($19): Kuterra Salmon, Mac & Cheese, Roasted Chicken. All kids dinners include soft drink & dessert.

Aalto Benny ($23): English muffin, poached eggs, cured pork belly, charred tomato charon, potato rosti, micro arugula

Duck Breakfast Bowl ($23): Confit duck, sautéed kale, Brussel sprouts, potato rosti, poached eggs, duck jus hollandaise

Quiche Florentine ($21): Free range eggs, nutmeg cream, puff pastry, wilted spinach, gruyère, salad

Brioche French Toast ($21): Almond crème anglaise, saskatoon berries

Croque Monsieur ($21): Rye bread, house bacon, Swiss béchamel, potato rosti. Make it a madame with eggs sunny side, add $3

Classic ($20): House bacon, two eggs your way, potato rosti, toast, charred tomatoes

Brussel Caesar ($18): Shredded & roasted brussels sprouts, purple kale, anchovy gremolata, gruyère, smoked pork belly. Add confit chicken thighs & pork belly for $12. Add 3 oz salmon for $16.

Aalto Club ($19): Toasted brioche, roast chicken, house bacon, arugula, sundried tomato mayo, kettle chips

Sides ($3-$6): Thick cut house bacon, egg your way, potato rosti, toast & preserves, smashed potatoes

Pretzel Pillows ($8): Fireweed beer pretzels, house cheese sauce

Cheese Plate ($17): Fine selection of Canadian cheeses, house-made Saskatoon berry compote, crostini’s, candied walnuts

Bison Tartare ($23): roasted pistachio, mustard seed, house chips, pretzel crostini, pickled shallots

Scallops ($23): Seared scallops, mint pea purée, pickled shallots, sweet peas, edible flowers

Garden Vegetable Bisque ($10): roasted red pepper, onion, tomato, basil, oregano

Brussel Caesar Salad ($18): Shredded Brussel sprouts & purple kale, anchovy gremolata, gruyère, smoked pork belly, cured egg yolk

Angus Striploin ($42): Six ounce Certified Angus Beef striploin, smashed baby potatoes, confit leeks, port jus, pickled mustard seed

Bison Petite Tenderloin ($40): Smashed potatoes, roasted cauliflower, broccolini, pistachios, pickled shallots, jus

Kuterra Steelhead ($40): Smashed potato salad, herb gremolata, snap peas, sweet peas

Duck Breast ($42): Charred carrots, parsnip purée, Saskatoon berry jus, fennel pollen, tuille

Fettucine ($30): Spinach, basil, brussel sprouts, kale, pickled shallots, parmesan, lemon, edible flowers
