The Evergreen Restaurant and Lounge at the Royal Canadian Hotel is Banff’s culinary gem. Executive Chef, Max Charbonneau, and his culinary team at take great pride in creating dishes with locally sourced ingredients to highlight the flavours of Alberta. All of the beef and elk is sourced from Alberta, the ultra-fresh vegetables are often from local farms and almost everything served is made in-house to transform regional ingredients into memorable moments.
