Starting the Day Southwest Style

    I found myself in Banff bright and early and I knew I needed to fuel up before facing the meetings I had arranged. Fortunately, I decided to go to Coyotes. Nestled just off Main Street, this cozy restaurant has a big heart and big flavours. Coyotes combines real, fresh ingredients with southwestern flare to create dishes that are interesting and delicious!

    Try them for breakfast. I did, and I can guarantee I will return. They serve healthy breakfast options that fill you up without leaving you wrecked. Their menu features a wide variety of options including vegetarian and vegan dishes. All their meals looked enticing! They can cater to allergies and adapt their meals for dietary restrictions.

    The juice. Is. Delicious. Freshly squeezed and with daily options, it’s a burst of flavour to start your morning. The juices are also generously proportioned for the price. And did I mention it’s delicious? Even if you’re not a breakfast person, pop in to try the juice. You won’t be disappointed.

    The meals have perfect portions. Their meals are enough to fuel your next adventure. For those hungry humans out there: Coyotes has you covered. For those looking for something lighter: you won’t be disappointed.

    Their food is prepared in an open kitchen. Professional wait staff are friendly, even first thing in the morning. I chose the Mountain Lady Breakfast, because let’s face it, I needed a pick me up. The pancakes were light and fluffy and came topped with wildberry sauce and real maple syrup. The back bacon reminded me of my Eastern roots and, like all of Coyote’s meats, came from Valbellas, a local supplier. The eggs were fresh and come from free-range chickens. Full of flavour with a bright yoke, they were delightful. You can choose from numerous egg options including poached, fried and scrambled. I did not see an egg leave that kitchen that wasn’t perfect!

    The potatoes were the most unique part of the meal. They had just enough southwestern spice and flavour to make them different than any other breakfast spot, but they weren’t overwhelming. They were a pleasant surprise and they complimented the entire meal. Of course, they tasted great dipped in that perfect, runny egg yolk.

    Coyotes is famous for their cappuccinos. Based on the amount of people ordering them, I can see why. Since I’m not a coffee drinker, I opted for an Earl Grey instead. For the tea drinkers out there, Coyotes does that right too. They asked if I wanted milk or lemon to accompany my tea. The lemon was a pleasant surprise, since this is a traditional way to have this tea.

    Bottom line: Try Coyotes. You won’t be disappointed.
